Risotto is one of my favourite things to cook and of course to eat. 💕I was the only student one in my class (in CIA )who got 19 out of 20 for the Risotto day, getting 20 was out of the question with Chef LeRoux 🙁🙈 and when I asked the Chef why not 20 out of 20, he replied I have never given anyone that and you can never get that 😆 I never understood why, but he told me my risotto was almost like his and he finished half of my plate, so that was a happy moment for me.🤗
When I started working in Taj Boston, I volunteered to make 60 litres of Risotto for the wedding we were working on the chef wasn’t too sure whether I will be able to make such a large quantity but taught by one of the best chefs I did deliver a good risotto.
Shivesh always says I don’t cook the dishes I used to in restaurants so I cooked him this delicious risotto with notes of #Absinthe and mildly flavoured truffle oil. I topped it with crispy mushrooms. He finished this whole plate and had another serving.

I really enjoyed my short amount of time in the shop last night... turning my last small bit of beautiful curly cherry (I’m using the Mcnaughton coring tool if anyone is wondering) . Tonight I need to finish up welding a heavier bracket to my trailer for a larger winch. I love to work but sometimes I need to work a bit smarter. The large winch will help me skid logs into my trailer a bit easier. (Temporary...until I can afford my dream trailer with a log grapple 🤗). Can’t wait to go rescue the rest of this incredible log from the forest. Stay tuned. .
