I have ventured over to the other side and decided to make a decorated vegan cake for a friend.
This proves that vegan cakes are not always boring and can look as amazing as they taste!! Hopefully this will be the first of many to come :)
This particular cake is a moist vanilla cake filled with berry frosting and covered in swiss meringue buttercream drizzled with blueberry glaze🍓🌹✨
All ze greeeens on this plate 🌱 kale cashew & basil pesto with gluten-free pasta and sautéed veggies is one of my fave quick and easy meals to prep or have when I’m feeling lazy! This time for the veggies i did mushroom, yellow and zucchini squash, sweet onion, and arugula but I’m always changing it up. Topped with the usual hemp hearts, everything bagel seasoning, and @brightfreshmicrogreens and called it a day 👏🏻 hope you all had a great one 🤗

Cassava tacos topped w/ pumpkin pesto, turmeric roasted chickpeas, @brightfreshmicrogreens mixed micro greens, tomatoes, and @traderjoes salsa. LITERALLY SO GOOD and took less than 15 minutes! I used @ottos_cassava_flour tortilla recipe ! This flour is grain free, gluten free, and nut free! 🙆🏻♀️ My husband and I have been taking the evenings off technology to spend time with each other. So I’ll be off once he’s home! I’ve noticed the more I shut off, the more I enjoy the things I do. Because I just feel so refreshed and ready to go! Wellllllll, have a good evening loves!!
1 C of fresh basil,
1/3 C of pumpkin seeds,
1/3 C of spinach or mixed greens,
1 TSP of olive oil,
1/2 lemon juiced
Pink salt and garlic
Blend, heat up, and enjoy!
One of the most satisfying dinners I’ve had in a while 🤗 Warm fusilli salad with roasted winter squash & mushrooms made in collaboration with @sunbasket 😍 everything is organic (and SO fresh)! I also love that the pasta is quinoa noodles! Did you know I used have an intolerance to quinoa, but happy to say no issues lately! Sooo glad I’ll have enough left over for tomorrow! #sunbasket

I was born and bred a steak and potatoes kind of girl. Nowadays it's grass-fed steak, organic potatoes and a whole lot more vegetables, but it's still simple, nutritious and anything but boring. Nate and I cook for slightly less health conscious friends and family quite often and the response is always something like "wow, I thought we'd be eating twigs and berries but this is actually really good!" I get SO much joy out of showing people how delicious and simple eating healthy can be. I started this page to share when I was teaching yoga but I think it blossomed into exactly what it was meant for, an outlet for me to share my passion for food, health and happiness.
